Choosing the specific type of Nitrous Oxide might seem like a complicated process but it’s really not. To start with you have 3 main types, and only one of them is relevant for use with food. 

Most shops in Austin are likely to only stock 8g food grade nitrous oxide canisters

This is the most readily available form of Nitrous Oxide, in the form of cream chargers for whipping cream and other culinary needs. You can buy these from mini marts, kitchen shops and Online! This grade is also the most misused unfortunately. 

This is used in cars to be injected into the engine, allowing it to output more power. This type of N2O almost always has hydrogen sulphate, (A Rotten egg smell) added to it to stop recreational users.

This medical nitrous oxide is 99% pure. Only chemical supply companies or a gas companies can purchase this product. This grade of the NOS is widely used in medical and dental anaesthetic applications.

Canister size

There are also 3 main sizes/formats of canisters. 8g, 16g and tanks. Most people are likely to only ever need the standard 8g cream chargers.

8g Canister

These canisters are the most readily available being vastly manufactured and fit nearly all whipped cream dispenser on the market. The products advertised above are perfect for this.

16g Canisters (Double Chargers)

These are double the standard weight for NOS canisters, simply holding more. However, not all dispenser fit this product and most require a threaded dispenser. Generally they’re not worth the hassle as they’re harder to source and can be more expensive. They are not necessary for most domestic purposes. Eg: Whipping cream

Tanks

Tanks of compressed NOS are generally only used in medical centres , ice cream vans and ect. Only medical facility’s, chemical companies and catering companies to get them refilled.
